I got this fun idea from a friend for an interesting new appetizer or side dish. Though I typically try to stay away form fried foods, the reason I was so inclined to try this recipe was for the Avocado. Avocado is my favorite green fruit. Not to mention I put it on almost everything I eat so naturally, I couldn’t resist trying this one. Also, I don’t know anyone who doesn’t like french fries! I ate this with the Chicken, Brie and Grilled Pear Focaccia Panini and it added a fun little flavor burst. The recipe for the avocado fries I made was enough for 2-3 people!
1 Cup Bread Crumbs
1 Tsp Lemon Pepper
1 Tbs Garlic Salt
Red Pepper Flakes
Making the Fries: Take our large non-stick saucepan. Put over stove on medium-high heat. Take out 2 small-medium sized bowls. Cook for about 5 minutes
Coat the bottom of the saucepan in a thick layer of olive oil, the entire bottom must be covered
Crack three eggs and beat until a smooth yellow color in one of the bowls, like you would if you were going to scramble them
In the other bowl combine a cup of breadcrumbs, lemon pepper, garlic salt, a few shakes of pepper, and a few shakes of red pepper flakes (add more if you like spicy food)
Cut avocado into strips with a medium thickness so they are not too fragile
Dip strips of avocado first in eggs bowl
Next dip strip into breadcrumb mix
Then place the coated avocado fry into saucepan
Continually flip to make sure it is getting fried on both sides
Take avocado fry out of oil after about 5 minutes and it looks golden brown
You can do multiple fries at once, just don’t let them burn!
Once they are done let them cool and serve with ranch! (or sriracha ranch if you are like me and love spice)
Serve it at a party as an appetizer or use it as a substitute side dish for your next burger or sandwich! I understand that nothing can ever replace french fries, but try this and add a little color in your life. Enjoy!
